Aylazan - Armenian Vegetable Stew


2 eggplants

3 potatoes

2 sweet pepper

1 onion

4 medium tomatoes

1 handful chopped cilantro

50g olive oil

Sea salt, freshly ground black pepper


  • Cut eggplants in half circles of 1 cm and place in a pot
  • Add diced potatoes , chopped peppers and onions
  • Cut tomatoes in 1cm circles and place over the vegetables
  • Add salt and pepper and 100ml of water
  • Cover the pot, bring to boil and cook on medium heat for 30 minutes
  • Before serving add chopped cilantro
