Ingredients:
2 eggplants
3 potatoes
2 sweet pepper
1 onion
4 medium tomatoes
1 handful chopped cilantro
50g olive oil
Sea salt, freshly ground black pepper
Preparation:
- Cut eggplants in half circles of 1 cm and place in a pot
- Add diced potatoes , chopped peppers and onions
- Cut tomatoes in 1cm circles and place over the vegetables
- Add salt and pepper and 100ml of water
- Cover the pot, bring to boil and cook on medium heat for 30 minutes
- Before serving add chopped cilantro
