Poached Salmon Fillets

Ingredients for 1 portion:

200g fillets of salmon

1/2 cup of white wine

1/2 sliced lemon

1/2 onion cut into rings

2 cloves of garlic

1 bay leaf

2 tablespoons olive oil

Sea salt and freshly ground black pepper

Sauce:

100ml heavy cream

30g blue cheese

Sea salt and freshly ground black pepper


Preparation

  • Wash salmon with cold water and take out bones
  • In a pot with 2 liter of water add white wine, lemon, onion, garlic, bay leaf, salt and pepper and bring to boil
  • Add salmon fillets and cook for 12-15 minutes
  • Bring to boil heavy cream and melt blue cheese inside it
  • Add several spoons of sauce over the salmon and serve
