Roasted Vegetables

Ingredients:

1 zucchini

1 eggplant

1 bell pepper

10 champignons

1 big red onion

1 whole garlic

2 teaspoons province herbs (marjoram, oregano, rosemary and thyme)

Olive oil

Salt and freshly ground black pepper to taste

Preparation

  • Cut all vegetables in 2x2cm cubes
  • Cut onion in big rings and garlic in half
  • Put everything in a big bowl, add spices, olive oil and mix very well
  • Place the vegetables in a baking sheet and bake for 35-40 minutes at 180C
