Ingredients:
Dough:
320g flour
180g butter
1 egg
120ml yogurt
1 teaspoon baking soda
Khoriz/Filling:
200g walnuts
100g icing sugar
2 teaspoons cinnamon
1 teaspoon vanilla extract
Preparation:
- In a big bowl combine flour and diced butter and mix till it looks sandy
- Add baking soda to yogurt, wait for a minute and fold into the dough
- Add the egg and knead until the dough fully comes together
- Cover the dough and put in the refrigerator for 30 minutes
- For the filling grind walnuts with icing sugar, and cinnamon in a food processor
- Take out the dough from refrigerator and roll out the dough into a 40cmx30cm rectangle with rolling pin
- Spread the filling evenly over the dough and roll it leaving seam side facing down
- Spread egg yolk over the log, poke it and make nice patter with a fork
- Put the log in the fridge for 20 minutes, that will make to cut gata easily
- Take out gata and cut in 3-4cm wide nice diamond shapes
- Transfer to a baking tray and bake for 30-35 minutes at 180C
