Pumpkin Soup

Ingredients:

1 kg pumpkin

1 small onion

2 cloves garlic

2 teaspoons curry

50ml coconut milk

Salt and Pepper to taste

Preparation

  • Peel pumpkin and cut into 2cm cubes
  • Chop onion and garlic
  • Place all everything into a pot, add curry, salt and pepper
  • Pure in 1 cup of water. Bring it to boil, reduce heat and cook for about 20 minutes.
  • Take the pot off the stove, add coconut milk and by hand blender blend it into soup.
