Ultimate Pavlova Cake


Ingredients:
Meringue:
4 eggs whites
1 pinch of salt
100g sugar
1 teaspoon vanilla extract
1 tablespoon cornstarch (this will prevent meringue to shrink and can be cut easily)
Cream:
100g cream cheese
100g heavy cream
25g icing sugar (or more if you like sweeter)
Topping:
Different berries
Preparation:
Meringue:
- Whip up egg whites with pinch of salt
- Gradually incorporate sugar until stiff peaks, then vanilla extract and cornstarch
- On a parchment using a plate make a circle with diameter of 22-24 cm
- Arrange the meringue inside the circle
- Bake it about 1 hour at temperature 130C, then turn the oven off and let the meringue completely cool down.
Cream:
· Beat icing sugar and cream cheese with a mixer
· Separately beat heavy cream until stiff peaks. It is about 10 minutes, not more, otherwise you will have butter.
· Combine together heavy cream with cream cheese mixture
- Just before serving, spread the cream over the meringue (you may use pastry bag) and decorate the cake with berries.
*- i never have the same berries and always get different variation of the cake. But Pavlova cake will always remain my favorite one.
