Armenian GATA with Walnuts

Giouvetsi with ORZO pasta

Ingredients:

1kg beef cut in bite size pieces

2 medium chopped onions

2 medium grated carrots

12 tablespoons tomato paste

200ml red wine

1 cinnamon stick

300g orzo pasta

100g grated feta cheese

Oil to fry

Sea salt and freshly ground black pepper

Preparation

  • Fry onions and carrots
  • Add beef and and fry it on all sides until crusty
  • Add tomato paste, wine, glass of water, cinnamon stick and salt and pepper
  • Lower the heat and simmer with the lid on for about 1 hour. Meat should be soft and tender.
  • Add orzo pasta mix well, place everything on a baking trey, cover with foil and cook in the oven for 40 minutes at 180C
  • If you cook giouvetsi in a cast iron pot, skip the previous step, just add orzo pasta, put the lid and bake in the oven fro 40 minutes at 180C.
  • Serve with grated feta on the top
