Fresh Quinoa Salad

Ingredients:
1 pack salad mix (around 200g)
100g cooked quinoa
1 medium cucumber
100g canned pitted black olives
1/2 red onion
100g feta cheese
1/2 lemon juice
Olive oil
Sea salt
Preparation:
- Add lemon juice and olive oil to cooked quinoa
- Slice cucumber into circles
- Drain canned olives
- Thinly slice red onion in half-moons *
- Quinoa, cucumber, olives and onions mix with salad
- Cut feta into small cubes and place over the salad
*- Cut onions put in vinegar water. This will take away the bitter taste.
