Armenian GATA with Walnuts

Hello my name is Arus. I am from Yerevan, Armenia, but I have been an expat wife last 10 years. Though I miss very much my home, I enjoy being an expat wife.

Mutabal

Ingredients:

1 cooked eggplant

2 table spoons tahini (sesame paste)

1 tablespoon plain yogurt

2 cloves of minced garlic

4 tablespoons olive oil and some for decoration

Salt and pepper by taste

Preparation

  • Eggplant can be cooked in different ways. The best is to roast it on the open fire. This will give wonderful taste of smoke. Also it is possible to bake it in the oven. The quickest way is just steam it in the steamer. And for sure you need to peel it. After baking/cooking/roasting put in a plastic bag, then it will be easier to peel.
  • One step: mix all above ingredients and your mutabal is ready !

Բաղադրիչներ:
- 1 եփած սմբուկ
- 2 ճ.գ. թահինի
- 1 ճ.գ. յոգուրտ
- 2 ատամ սխտոր, մանրախաշ
- 4 ճ.գ. ձիթայուղ + քիչ ավելի
- Աղ, պղպեղ

Պատրաստման եղանակ:
Սմբուկն ամենալավ կեղ բաց կրակի վրա թխել: Կաայ-ական ձևերով էլ կարելի — ջրի ու ջերմի: Սմբուկի ողջ ծուծ քաշել: Ամեն ինչ բլենդերով հարել: Ձիթայուղ ու paprika ծածկել:
