Giouvetsi with ORZO pasta

Ingredients:

1kg beef cut in bite size pieces

2 medium chopped onions

2 medium grated carrots

12 tablespoons tomato paste

200ml red wine

1 cinnamon stick

300g orzo pasta

100g grated feta cheese

Oil to fry

Sea salt and freshly ground black pepper

Preparation

  • Fry onions and carrots
  • Add beef and and fry it on all sides until crusty
  • Add tomato paste, wine, glass of water, cinnamon stick and salt and pepper
  • Lower the heat and simmer with the lid on for about 1 hour. Meat should be soft and tender.
  • Add orzo pasta mix well, place everything on a baking trey, cover with foil and cook in the oven for 40 minutes at 180C
  • If you cook giouvetsi in a cast iron pot, skip the previous step, just add orzo pasta, put the lid and bake in the oven fro 40 minutes at 180C.
  • Serve with grated feta on the top

Armenian Omelette with Tomatoes

Ingredients:

1 big onion diced

5 medium tomatoes

1 bell pepper

Fresh cilantro

5 eggs

Butter to fry

Salt and black pepper

Preparation

  • Fry onion until transparent and tender
  • Pure boiling water over tomatoes and take out the skin. This step is optional
  • Dice tomatoes, bell pepper and add to onion
  • Fry everything altogether
  • In a separate bowl break and beat the eggs, add salt and freshly ground black pepper
  • Chop cilantro and together with eggs add to the pan
  • Mix everything evenly and fry until eggs are totally cooked

Ingredients:

1 cooked eggplant

2 tablespoons tahini (sesame paste)

1 tablespoon plain yugurt

2 cloves of minced garlic

4 tablespoons olive oil and some for decoration

Salt and pepper by taste

Preparation

  • Eggplant can be cooked in different ways. The best is to roast it on the open fire. This will give wonderful taste of smoke. Also it is possible to bake it in the oven. The quickest way is just steam it in the steamer.
  • Mix all above ingredients and your mutabal is ready !

Tart Tatin

Tart Tatin

Ingredients:

Dough -pate brisee

4-5 apples (depends on the size and the form)

Caramel

100g sugar

50g butter

Preparation

Caramel —

  1. Put sugar with butter on the stove with medium heat, don’t stir, wait until it gets brown

2. Pure the caramel into the tart form

3. Peel the apples and slice

4. Add the apples to caramel

5. Cover it with rolled dough and make sure that the dough goes

tidily inside by edges

6. Make holes with fork

7. Bake 30 minutes at the temperature 180C.

 *Wash the caramel pot with cold water
